Sue’s Delicious Fat Free Fruit Cake

Ingredients 1kg mixed fruit
2 cups fruit juice of other liquid
2 cups SR flour
Method Soak fruit in juice for 2 hours or longer. Stir flour into mixed fruit and mix well. Put into a large baking tin and bake for 2 hours in the bottom of your oven at 130C.
Remove and leave to cool in the tin.

Options:

Very nice served warm with custard as a dessert.
